Mixed fruit and coconut swirls

This evening after I returned from work I was in the mood for celebrating. No particular reason, but. just because...On the way back I was talking with Naz about some of our childhood favorite treats that we used to enjoy. In both our cases, we both had enjoyed coconuts and fruits in sweet things! When I got home, while preparing dinner, I came across some ready to roll pastry. So I decided to make a dessert with the pastry with coconut and fruit fillings. This was really easy and quick to put together, thanks to the ready to roll pastry available in supermarkets, and all of it was done within 30 mins.


You will need:
Ready to roll pastry sheets (preferable puff pastry) -1 (you can use short crust pastry as well for a variety)
1 cup desiccated coconut (I used unsweetened)*
1/2 cup soft brown sugar
1 generous cup of mixed fruits (you can use tutti fruti or any of your favorite candied/dried fruits mixture)
1 tsp apple spice (or) any spice/s of your choice
1/2 tsp cardamon (optional)
4 tbsps of water**







Leave the pastry roll to thaw out of the fridge for 20 mins or according to the package instructions. Preheat the oven to 160 degrees Celsius for fan assisted or 180 degrees Celsius for non-fan assisted ovens (double check to makes sure about the temperature in the packaging instructions as well since each brand is different).



In a mixing bowl add the soft brown sugar and







water. You can use a sauce pan if you plan to use the stove top for the next step.


Warm up the mixture until the sugar is dissolved completely (Stirring occasionally) around 40 secs in the microwave on high.







Add the coconuts, mixed fruits and all the spices.







Mix well to coat the sugar over everything.








Roll out the pastry sheet on to a work surface. They usually have a parchment paper. If not lightly dust the surface with plain flour before rolling out the sheet.


Spread the filling onto the sheet evenly (sorry, no picture since my hand was oily).Starting from one end roll the sheet all the way to the other end and seal the edges by lightly pressing down. If it does not stick together brush with little water and press them closed. You should now have a log.

Cut the log into 8-12 pieces depending on the thickness you want.








Bake in the oven for 12-15 mins, turning them half way, until the pastry turns golden.














*Note: You can use sweetened coconut. Just reduce the amount of sugar by 2 tbsps.
**Note: You can also use milk/cream and add a tbsp of butter instead of water for a richer taste.
