Risotto

One of the first few dishes that became quick favorites of Anjalie was risotto. The creamy texture of the rice and savory, but mild, taste can be very pleasing to children and can be enjoyed by the whole family.


You will need:
2 cloves of garlic crushed (optional)
100g chicken breast fillet, diced or broccoli and carrots or any other veggies you like
1 small celery, trimmed and finely sliced (optional)
1/2 Heinz chicken or veggie stock cube
50g rice (risotto rice needs more time than others)
25g frozen peas
1 tbsp butter
Salt and black pepper to taste


Melt the butter in a medium pan, add garlic and celery and saute for 5 minutes.
Add the chicken/veggies and cook for 5 more mins. Two mins should be enough for veggies.
Stir the rice into the chicken mixture and stir to coat the rice with the butter.
Make up the stock cube with 300ml of boiling water. Add a little of the stock. Cook covered stirring occasionally until the liquid has been absorbed.
Repeat until all the stock has been absorbed and the rice is tender. Stir in the peas and heat through for 2 minutes. Cool slightly then serve with a little grated cheese if your toddler likes it.

This is a very forgiving recipe and is usually liked by toddlers. You can even use already semi-cooked rice if you are in a hurry and just use enough stock to mix the rice in and make sure it is cooked thoroughly.
